Why do Samsung emojis look different from Google's on the same Android phone?

Samsung ships its own One UI emoji set, which overrides the stock Noto Color Emoji that ships with Android. So a Galaxy phone and a Pixel phone — both Android — will show different emoji artwork. This was a source of real miscommunication in the past (notably the infamous Samsung cookie 🍪 which used to look more like a cracker).
